Elevated Chicken Caesar Wraps

Ingredients for Creamy Caesar Dressing:
1/12 c. mayonnaise
2 Tbsp. Basil Olive Oil
2 Tbsp. Black Garlic Balsamic
1 Tbsp. Gravelbourg French Mustard
2 tsp. lemon juice
1 tsp. Worcestershire sauce
1 tsp. Prairie Oils Spiced Parmesan Spice Blend
salt & pepper to taste

Ingredients for Wraps:
2 boneless, skinless chicken breasts
2 c. kale, chopped
2 c. romaine lettuce, chopped
4 large tortilla wraps
1/2 c. Viani Liguarian Basil Pesto
1 c. cherry tomatoes, quartered
1 avocado, sliced
1/2 c. Parmesan cheese, shaved or grated

Start by whisking mayonnaise, Basil Olive Oil, Garlic Balsamic, mustard, lemon juice, Worcestershire, seasoning into a creamy Caesar style dressing. Add salt and pepper to taste. Refrigerate.

Coat chicken breasts with 1/4 c. of the dressing and marinate for one hour. Grill over medium heat for 10 - 15 minutes until fully cooked, then let rest for 10 minutes before slicing. Toss chopped kale and romaine with half of the dressing, then spread pesto over the tortillas. Layer with dressed greens, sliced chicken, cherry tomatoes, avocado, and Parmesan cheese. Roll the wraps tightly, slice in half and serve with the remaining Caesar dressing for dipping. Serves four.
