Elderflower Balsamic Strawberries with Mascarpone

Ingredients:
3 pints of strawberries, hulled and halved or thickly sliced
1/3 c. Elderflower White Balsamic
1/2 tsp. fresh lemon juice
4 Tbsp. powdered sugar
1/2 c. chilled mascarpone cheese
1/2 c. chilled heavy whipping cream
1/2 tsp. vanilla

In a medium bowl, combine strawberries, white balsamic, lemon juice and 2 Tbsp. of the powdered sugar. Set aside and let marinate for approximately 30 minutes. Can drain and reserve juice to use as drizzle/syrup if too moist.

Next, combine mascarpone cheese, cream, vanilla and 2 Tbsp. powdered sugar in a medium bowl and whisk until soft peaks form.

To serve:

- Use berries and cheese mixture to top a vanilla sponge cake.
- Layer alternately with graham crackers in 8x8 pan and chill for 4 hours to create a gorgeous springtime dessert.
- Crumble vanilla or dark chocolate wafer cookies into 6 dessert bowls or wine glasses. Top with cheese mixture and berries for a decadent parfait.
