Easy Bruschetta

2 c. diced roma tomatoes (or whichever varietal you like)
1 clove garlic, minced
1/4 c. diced red onion
2 tsp. Garlic Olive Oil
2 tsp. Habanero Honey Vinegar
3/4 tsp. Saltwest Naturals Sun Dried Tomato Basil Sea Salt
serve with a sprinkle of fresh chopped green onion or chives if desired

Add all ingredients together and mix well. Allow to sit or refrigerate for 20 minutes to develop flavour. Serve with baguette, pita chips or multigrain tortilla chips.
