Custom Crab Roll

Ingredients for Creamy Seafood Salad:
1/2 c. mayonnaise
1 Tbsp. House Blend Olive Oil
1 Tbsp. Pink Grapefruit White Balsamic - or customize your signature seafood salad taste by trying Lemon, Jalapeno Lime, or Pineapple White Balsamics!
1 tsp. Old Bay Seafood Seasoning
2 tsp. fresh chives, chopped
pinch of black pepper
1 lb. cooked crab (or imitation crab) meat
1/4 c. celery, minced
2 Tbsp. shallot, minced (or green onion, chopped)
Ingredients for Rolls:
deli roll of choice
2 c. baby spinach
1 c. cucumber, julienned
1 c. red bell pepper, julienned
1c. carrots, peeled and julienned
1 c. red cabbage, shredded
fresh dill for finishing
Whisk together mayonnaise, Houseblend, Pink Grapefruit Balsamic, seasoning blend, chives and pepper to create a creamy dressing. Cover and refrigerate until ready to use.
Roughly chop crab meat or rip into pieces, then place into a large bowl. Add celery, shallot, and half of the dressing. Mix all together.
Spread the remaining dressing evenly over rolls and layer with spinach, red bell pepper, cucumber, carrots, cabbage and the crab salad. Top with fresh dill as desired.
To transport for picnics or lunch, roll the sandwich tightly in wax or parchment paper, tucking in the ends, then slice them in half to serve.
