Curried Lamb Chops with Honeydew and Cucumber Raita


2 c. honeydew melon, peeled and cubed
2 c. unpeeled cucumber, cut into cubes
1/2 c. 2% plain yogurt
1 shallot, finely chopped
1/4 c. chopped fresh cilantro
salt and pepper
Lamb Chops:
1 Tbsp. Medium Extra Virgin Olive Oil
1 tsp. curry powder
12 lamb chops, about 1 inch thick
salt and pepper to taste

In a bowl, combine all the ingredients. Season with salt and pepper. Set aside.

Lamb Chops:
Preheat the grill, setting the burners on high. Oil the grate. In a bowl, combine the oil and curry powder. Add the chops and coat well. Generously season with salt and pepper. Grill the chops for about 2 minutes on each side or until the desired doneness. Serve with the honeydew and cucumber raita.
