Ingredients:
1 seedless cucumber, sliced or spiraled
2 plum tomatoes, sliced
1/2 sm. red onion, sliced thinly
1 c. arugula
1 avocado, cut into bite size pieces
1/3 c. Mild Extra Virgin Olive Oil
3 Tbsp. Sicilian Lemon White Balsamic
1 Tbsp. fresh cilantro, chopped
1/8 tsp. Saltwest Naturals Roasted Onion & Garlic Sea Salt
1/2 tsp. paprika
2 Tbsp. pepitas (roasted pumpkin seeds)
Combine all ingredients, except pepitas and paprika, in a a large stainless bowl. Toss gently to combine. To serve, divide between 4 plates and sprinkle with pepitas and paprika.
