Crispy Waffles

Ingredients for the

2 eggs
1 3/4 c. milk
1/4 c. Blood Orange Olive Oil (try Lemon Olive Oil, or Persian Lime Olive Oil)
2 c. flour
4 tsp. baking powder
1 Tbsp. sugar
1/2 tsp. salt

Ingredients for the Waffle Sauce:
2 Tbsp. cornstarch
2 c. milk
2 egg yolks
1/2 c. sugar
1 tsp. vanilla extract

Ingredients for the Fruit Sauce:
1 c. rhubarb
1/4 c. sugar
3 Tbsp. Balsamic Vinegar - use whatever fruit flavor you want to experiment with!

Instructions for the Waffles:
Heat waffle iron. Beat eggs until fluffy. Beat in remaining ingredients just until smooth. Pour batter from cup or pitcher onto center of hot waffle iron. Bake until steaming stops, about 5 minutes. Also good batter for pancakes.

Instructions for the Waffle Sauce:
In a saucepan mix cornstarch with 1/2 cup milk and stir until smooth. Add remaining 1 1/2 cups milk, egg yolks, and sugar. Bring to a bubbling simmer, stirring constantly, until thick. Stir in balsamic vinegar.

Instructions for the Fruit Sauce:
Mix ingredients together in saucepan. Bring to a boil and reduce to desired consistency, stirring frequently.
