Cilantro Red Onion Pesto

2 cups cilantro, large stems removed
1/2 cup pepitas/pumpkin seeds
1/2 roasted red onion
1/2 teaspoon chopped and seeded serrano chile
1/2 teaspoon sea salt
1/4 cup Cilantro Red Onion olive oil

In a food processor, pulse the cilantro, pepitas, roasted onion, chile, and sea salt until well blended. With the food processor running, slowly add the olive oil in a steady stream.
