Chuckwagon Tortilla Stack - Prairie Oils Version

Ingredients for Chuckwagon Filling:
1 Tbsp. Chipotle Olive Oil
2 lbs lean ground beef or bison
1 (28 oz) can diced tomatoes
1 can black beans, drained
1 c. Wildly Delicious Tranquilo Salsa
½ c. Sinai Gourmet Memphis BBQ Sauce
4 tsp. chili powder
2 tsp. Salt Cellar Bambino Taco Blend
2 tsp. Salt Cellar Oh Chihuahua Spice Blend
Ingredients for Tortilla Stack Layers:
1 bag of round flat tortillas of choice
1 c. Chuckwagon Filling
grated Unique Brazilian Dairy Minas Frescal Cheese
Bring Chipotle Olive Oil to temperature in a large pot over medium-high heat. Add lean ground beef and stir, breaking it up into small pieces, until it browns and is cooked through.
Add tomatoes, black beans, salsa, BBQ sauce, chilli powder, Taco Spice Blend and Oh Chihuahua Spice Blend. Simmer for 15-20 minutes. Turn on oven to 350F and prepare to make stacks.
To create Tortilla Stacks, line a cookie sheet with parchment paper or grease a large roaster pan. On one half of the dish, layer in order: 1 tortilla, 1 cup of Chuckwagon Filling, and asprinkle of cheese. Repeat one time to create a double layer stack.
Start a new Stack and follow layer orders again. Bake at 350F for 5 – 10 minutes to heat through and melt cheese.
Cut into wedges and serve.
You can also top with your favourite taco fixings if desired, like sour cream, shredded lettuce, jalapenos, olives, onions, and many more!
Yield: 8 cups filling/4 double layer stacks
