Chocolate Orange Chocolate Chip Cookies

Ingredients:
1/2 c. Blood Orange Olive Oil
1 c. light brown sugar
1/2 c. granulated sugar
1 egg
1 large egg yolk
2 tsp. vanilla extract
1 tsp. baking soda
1/2 tsp. kosher salt
1 1/2 c. all-purpose flour
1 c. chocolate chips
Saltwest Naturals Flor de Sal Sea Salt to sprinkle on top (optional)

Preheat oven to 350F. 

In large mixing bowl or stand mixer, whisk together Blood Orange Olive Oil, brown sugar, granulated sugar, egg, egg yolk, and vanilla extract. To ensure oil is well incorporated, mix for 3-5 minutes or until mixture becomes slightly frothy. 

Add baking soda and kosher salt and mix until well combined. Using a spoon or spatula, fold in flour until gradually by the spoonful. When adding the last spoonful of flour, also add chocolate chips and fold or stir in just until flour is incorporated.

Using a 2 tablespoon cookie scoop, portion out cookie dough, form gently into round balls and arrange on baking trays lined with parchment paper. Press down evenly on each dough ball just slightly, to ensure even baking. Sprinkle tops of unbaked cookies with sea salt.

Bake for 9 minutes, until edges are golden and middles are just set, no longer shiny. Let fully cool on the baking sheets before transferring to a wire rack.
