1 pineapple, cored and sliced
2 Tbsp. Chipotle Olive Oil
1/2 c. fresh cilantro, chopped
1/4 c. red onion, finely chopped
1 serrano pepper, stemmed, seeded, and finely chopped
juice and zest of 1 lime
1/8 tsp. sea salt
Preheat grill to high heat. Toss sliced pineapple with Chipotle Olive Oil, salt and pepper. Grill 1-2 minutes per side or until nicely charred. Remove from grill, let cool and dice. Toss all ingredients together in a large bowl. Serve immediately or cover and chill until ready to use.
