Ingredients:
11 c. diced tomatoes
3 c. diced celery
3 c. diced onion
5 Tbsp. Salt Cellar Oregano Seasoning
1 Tbsp. dried basil
1/4 c. Italian Herb Balsamic
1/2 - 1 c. tomato juice (approximate)
coarse pickling salt
sugar
Add first 6 ingredients together and mix well but gently and let sit for 1/2 hour. prepare and sterilize your jars. When ready, use a slotted spoon and fill the jars packing quite tightly. Tap the jar on the counter soft (surface) gently several times to help it pack down the add more. Fill to the shoulder. To EACH jar add 1/2 tsp. coarse salt and 1/2 tsp. sugar and top off with tomato juice. Insert a knife into the center of the jar and wiggle it slightly so the juice gets to the bottom. Seal the jars and place into a hot water bath for 30 - 40 minutes to process. Remove and let cool to room temp to seal.
