Balsamic Poached Apricot Parfaits

Apricot yogurt parfait in glass with raspberries and pistachiosIngredients:
4 fresh apricots, washed cut in half, pitted
1 c. water
1/2 c. Apricot White Balsamic
2 Tbsp. honey
1/4 tsp. vanilla
2 c. plain Greek yogurt
1/2 c. fresh raspberries
1/4 c. pistachios, roughly chopped

Place apricots in small saucepan and cover with water. Add Apricot Balsamic and honey and bring to a boil. Reduce heat to low and poach apricots for 4 minutes. Remove pan from heat and cool to room temp. Stir vanilla into apricots and refrigerate for a couple of hours or overnight. 

For each parfait, layer 1/2 c. yogurt, 1 Tbsp. pistachios, 1/4 of the raspberries and 1/4 of the drained apricots in a pretty glass. 

Serves 4
