Baked Cheese Fondue

Ingredients:
2 tsp. cornstarch
2 Tbsp. milk
1/2 c. cream cheese, room temp.
1 medium wheel brie cheese, rind removed and cubed
1 c. Gruyere cheese, grated
2 tsp. fresh thyme leaves
2 tsp. chopped fresh rosemary
2 garlic cloves, thinly sliced
1/4 c. Herbes de Provence Olive Oil
1/4 tsp. cracked black pepper

Preheat oven to 350F. 

In the bottom of a small mixing bowl, whisk together the milk and cornstarch to make a slurry. Add the cream cheese and mix to combine, creating a loose, creamy mixture. Add the brie and the Gruyere and mix to combine. Transfer the cheese mixture to an oven proof baking dish and spread into an even layer. Sprinkle with the fresh herbs and garlic, drizzle with olive oil and finish with cracked black pepper.

Move the dish to the oven and bake for 15 - 20 minutes until the cheese is melted an bubbly. Turn the broiler on and brown the fondue for 2 - 3 minutes, keeping an eye on the cheese to ensure it doesn't brown to much.

Serve hot from the oven with baguette slices, toasts and firm apple and pear slices.
