Bacon Tomatini

Ingredients:
1 c. vodka
1/2 c. Bacon Olive Oil
1 c. cherry tomatoes
pinch of salt and pepper
1/4 c. Olive juice
1/4 cv. dry vermouth
garish such as cooked bacon, fresh basil leaves, cherry tomatoes, and olives

Blend vodka with our Bacon Olive Oil until combined, then transfer to a sealed container and steep at room temp for 24 hours. Chill in the freezer for 2 hours, remove the separated oil and discard.

Broil tomatoes on a foil lined sheet, drizzle with olive oil and seasoned with salt and pepper for 5 - 6 minutes until soft. Cool, mash and strain to reserve the juice.

Combine tomato juice, infused vodka, olive juice and vermouth in a shaker with ice. Shake well and strain into martini glasses. Garnish with basil, roasted tomatoes, bacon and olives as desired.
