Apple Spice Coffee Cake

Ingredients for Cake:
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/4 tsp. nutmeg
1/4 tsp. cardamom
pinch of ground cloves
1/2 tsp. sea salt 
1/2 c. Mild EVOO (or try Butter or Sweet Butter Olive Oil)
3/4 c. sour cream or Greek yogurt
1/2 c. sugar
1/4 c. Gala Apple Balsamic
2 large eggs, beaten
2 large apples, peeled and finely chopped (about 2 cups)

Ingredients for Topping: 
1/4 c. brown sugar
1/4 c. sugar
1/2 tsp. cinnamon
1/2 tsp. ginger
1 1/2 c. flour
1/2 c. Blood Orange Olive Oil

Preheat oven to 375F. Grease and flour a 9" springform pan with 1 Tbsp. EVOO and 1 -2 Tbsps. flour until the base and sides are fully coated, then set aside. 

In a mixing bowl, whisk together flour, baking powder and soda, spices and sea salt until well mixed. In a separate bowl, whisk together EVOO, yogurt or sour cream, sugar, balsamic and eggs, then stir in the apples.

Add the flour mixture to the EVOO mixture, folding gently until just combined. Be careful not to overmix the batter.

In the bowl used to stir the dry ingredients, add the topping ingredients except the olive oil. Slowly mix in the olive oil with your hands until it forms a soft, crumbly dough like mixture. Set aside.

Pour in half the cake batter into the springform pan, then sprinkle a third of the streusel evenly over the batter. Pour in the remaining batter gently, then top the cake with the remaining streusel. Bake in the oven for 40 minutes or until the cake is golden brown and a toothpick comes out clean in the center. Move the cake to a rack and remove the sides of the springform pan. Let cool for 10 - 15 minutes before cutting and serving warm. Serve with a drizzle of warm caramel if desired.
