Zesty Pickled Cucumbers

Ingredients:
1/2 c. hot water
1 Tbsp. sugar
1/2 c. Cilantro Garlic White Balsamic
1 1/2 tsp. Prairie Oils Sicilian Spices Spice Blend
1 tsp. sea salt
1 large English cucumber, sliced into spears
1/4 c. yellow onion, peeled and sliced
1 red or green Jalapeno' pepper, sliced
In a large mixing bowl, combine hot water and sugar. Whisk until the sugar is fully dissolved. Add the Cilantro Garlic White Balsamic, Sicilian Seasoning Blend, and the sea salt to the bowl and whisk again to blend.
Next, add the cucumber, onion and jalapeno' to the mixture. Stir well to ensure all vegetables are well coated.
Transfer the pickling liquid and vegetables to a large mason jar or airtight container. Seal and refrigerate overnight to allow the flavors to develop. These quick pickled cucumbers will keep in the fridge for several weeks. Makes approx 2 cups.
