Sweet and Savory Popcorn Duo

Ingredients for Olive Oil Caramel Popcorn:
1/4 c. Sweet Butter Olive Oil
1 c. light brown sugar
1/2 c. maple syrup
1 tsp. vanilla
3/4 tsp. salt
1/2 tsp. baking soda
8 c. popped plain popcorn

Ingredients for Umami Cheddar Popcorn:
8 c. popped plain popcorn
3 Tbsp. Mushroom & Sage Olive Oil
3 1/2 Tbsp. cheddar cheese powder
1/2 tsp. salt

To make the caramel popcorn, preheat oven  to 250F. Line a large baking sheet with parchment paper. Place olive oil, brown sugar, maple syrup, vanilla and slat in a large pot and whisk to combine. Bring the mixture to a bubbly simmer over medium heat, whisking frequently. Once bubbling  cook the mixture for 7 minutes, whisking constantly. Place the popped popcorn in a large bowl and set aside. 

Remove from the and add the baking soda and whisk to combine (the mixture will increase in volume and bubble up more, that is normal). Immediately pour the mixture over the popcorn and using a rubber spatula, gently stir to thoroughly coat.. Transfer the coated popcorn to the prepared baking sheet and spread out in an even layer. Place the baking sheet in the oven and bake for 40 minutes. This will help harden the caramel to the popcorn, Remove from the oven and set aside.

To make the cheddar popcorn, place the popcorn in a large bowl. Drizzle the popcorn with olive oil and toss to evenly coat. Sprinkle the popcorn with the cheese powder and salt and toss to coat. Either combine the two popcorn flavors together for a sweet and savory snack or serve separately.
