Rosemary Balsamic Beets with Crispy Edges

Ingredients:
8 beets
2 Tbsp. Rosemary Olive Oil
2 Tbsp. Pink Grapefruit White Balsamic
salt and pepper - to taste
3-4 fresh rosemary sprigs, ripped or chopped into 2" pieces

Preheat oven to 400F convection (or 415F regular oven) with large sheet pan covered in foil already inside. Peel and chop the beets into 2" pieces. Add all ingredients except rosemary sprigs to a mixing bowl and toss to coat.

Once oven is preheated, use oven mitts to remove empty sheet pan from oven. Immediately add coated beet chunks to hot pan and quickly arrange in single layer, covering entire baking sheet with foil. Place back inside oven.

Roast for 40 minutes. Stir on beets and roast another 15-20 minutes, removing foil for last 10 minutes of cooking to achieve more caramelization if desired.
