Ingredients:
1 1/2 lbs. lean ground beef or turkey
1/2 c. bread crumbs
1 egg
1 Tbsp. diced sweet onion
1 Tbsp. mustard
1 tsp. salt
1/4 tsp. pepper
2 c. grated mozzarella or cheddar cheese (or a mixture of both)
1/2 c. Espresso Balsamic
1/2 c. ketchup
1 loaf French Bread
Preheat oven to 350 degrees.
Mix together all ingredients except French bread, set aside. Slice the French bread in half length wise. Use aluminum foil to make 2 'trays' and set the bread inside with sliced sides facing up. Spread uncooked meatloaf mixture evenly on both slices of the French bread.
Shape foil tightly around the sides of the bread so just the tops of the bread is exposed (this prevents sides from burning). Bake for 35 minutes or until meat is cooked through and beginning to caramelize on top. Top with more grated cheese and broil for a few minutes before serving.
Note: You can also make this into a meatloaf without the French Bread and bake in 2 loaf pans or a 9x13 baking dish.
