Hearty Meatloaf Supper

1 1/2 lbs. lean ground beef or turkey breast
1/2 c. bread crumbs (or Panko)
1 egg
1 Tbsp. diced sweet onion
1 Tbsp. mustard
1 tsp. salt
1/4 tsp. pepper
2 c. grated mozzarella or cheddar cheese (or a mixture of both)
1/2 c. Espresso Balsamic
1/2 c. ketchup
1 loaf French Bread
Tuscan Herb Olive Oil for brushing

Preheat oven to 350 degrees.

To make meatloaf, mix all ingredients except French bread and Tuscan Herb Olive Oil together. Spread into oiled 2 loaf pans or 9x13 inch baking dish. Bake in loaf pans for 45 minutes - 1 hour, or 9x13 baking dish for 1 - 1 1/4 hours.

Serve with Tuscan Herb Olive Oil brushed on French bread and toast in oven.

To bake meatloaf on French bread, slice the French bread loaf in half lengthwise. With the sliced side up, cover the bottom and sides with foil. Drizzle the cut sides of the bread with the Tuscan Herb Olive Oil. Spread uncooked meatloaf mixture on both sizes of the French bread. Bake for 35 minutes.
