Duchesse Potatoes

2 lbs Adora potatoes, peeled and quartered
2 Tbsp. Garlic Olive Oil
2 Tbsp. Butter Olive Oil
2 egg yolks
Saltwest Naturals Smashed Peppercorn Sea Salt
2 tsp. Fire in the Kitchen Veggie Blaze
Peel and quarter potatoes. Place in pot with cold, salted water. Drizzle in 2 Tbsp. Garlic Olive Oil and bring water to a boil. Check after 20 minutes, continue to cook until done. You want potatoes really soft.

Strain potatoes, mash them as for mashed potatoes. Add the egg yolks and Butter Olive Oil, continue to mash. Stir in Smashed Peppercorn Sea Salt and Veggie Blaze Rub.

Place potato mixture in pastry bag and pipe potatoes on a cookie sheet. Bake in oven at 400 F till golden brown.
