Crostini Dolce with Marinated Berries

Ingredients:
1 baguette, sliced
4 Tbsp. Lemon Olive Oil
1 1/2 c. ricotta
pinch of cinnamon
1/2 c. fresh blueberries
1 c. fresh strawberries, sliced
1/2 c. fresh raspberries
1/2 c. canned cranberry sauce
2 Tbsp. Blueberry or Raspberry Balsamic
2 Tbsp. honey
4 Tbsp. grated white chocolate
Preheat oven to 400 F and line 2 large baking sheets with parchment paper. Place the baguette slice on the baking sheets and brush with olive oil. Place in the oven and bake for 10 - 12 minutes or until lightly golden and crisp. Set the crostini aside to cool slightly and sprinkle with cinnamon before spreading with the ricotta and set aside.
Place the berries and the cranberry sauce in a bowl and add the balsamic and the honey, stir to combine. Spoon the mixture onto the crostini and sprinkle with the grated white chocolate before serving.
