Chocolate Chip Buttermilk Cake

3/4 c. Extra Virgin Olive Oil (or try Blood Orange Olive Oil
1 3/4 c. sugar
1 c. buttermilk
2 tsp. vanilla extract
4 large eggs
2 c. all-purpose flour
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 c. mini chocolate chips
Cocoa Dusting:

1 c. powdered sugar
1 Tbsp. cocoa powder


Preheat oven to 350°F. Coat 9x13 inch pan with olive oil cooking spray. In mixer bowl, add olive oil, sugar, buttermilk, vanilla, and eggs. Blend on medium speed for 1-2 minutes. Add flour, baking powder, baking soda, and salt. Mix until well blended. Gently fold in chocolate chips. Pour into prepared pan. Bake 40-45 minutes or until knife inserted into the center comes out clean. Remove and cool completely. In small mixing bowl add powdered sugar and cocoa powder. Mix until completely blended. Use a shaker or a fine strainer to dust the top of the cooled cake.
