Alfoos Mango White Balsamic Vinegar

The Alfoos mango cultivar is considered by many to be one of the best in terms of sweetness, richness, and flavour. It grows in India and is prized for its creamy, floral notes, and sweet, juicy flesh. Fantastic with shrimp, scallops, salad, and in salsa for a tropical, sweet-tart twist!

Black Cherry Balsamic Vinegar

Rich and sweet natural black cherry concentrate and other natural flavourings are combined with aged Balsamic Condimento to create a sweet, fragrant and very rich tasting product that has garnered great reviews from our gourmet customers. Black Currant Balsamic Vinegar

Black Currant Balsamic Vinegar is made of native Northern Europe and Asia black currants that have a wonderful, slightly astringent, sweet, grape-like flavour, that is sure to please the most discriminating palate. Wonderful taste when blended in vinaigrette, or drizzled over baked or fresh fruits. Drizzle over ice cream or your favourite cheese!

Pairs well with Blood Orange, Lemon or Herb de Provence Olive Oils. Try it with Roasted Walnut Oil, too.
Blackberry-Ginger Balsamic Vinegar

Our Blackberry-Ginger Balsamic is sugar and spice and everything nice. A seductive mix of tart blackberries combined with the heat and depth of flavour from the ginger makes this a special favourite. Amp up your Asian salad dressing or pump up your stir-fry with a quick drizzle in the last moments of cooking.

Delicious as a marinade with our Blood Orange, Lime, or Garlic Olive Oil for chicken or pork. Try it drizzled lightly over a fruit medley, with Angel Food Cake. Amazing!
Blenheim Apricot White Balsamic Vinegar

The Blenheim variety is both sweet and tart with an intensely aromatic aroma of honeysuckle and picked with a faint green tinge. We’ve married this with our aged white balsamic condimento. The resulting collaboration is intoxicating as it is crisp and tart.

Great with grilled chicken, as a glaze or served with cheese. Pairs fantastically with Roasted Almond Oil or Portuguese Picual EVOO!

Blueberry Balsamic Vinegar

Our luscious Blueberry Balsamic Vinegar is just as amazing over garden salad as it is used over fruit salad. When paired with a delicate Extra Virgin Olive Oil, such as Arbequina, the intense blueberry flavour just shines.

Fantastic with our Blood Orange or Lemon Olive Oils. Pairs well with blue and feta cheese, or over cottage cheese perogies!
Cara Cara Orange-Vanilla White Balsamic Vinegar

Creamy, sultry, pure Madagascar Vanilla and the bright citrus of Cara Cara Oranges combine to delight the senses. Truly surprising and decadent drizzled over fruit salad with shaved dark chocolate sprinkled on top. Try some in your sparkling water, mixed drinks, or over yogurt and vanilla ice cream. Makes a great stir fry with Blood Orange Olive Oil and Dark Toasted Sesame Oil. Use this complex, heart-healthy combination over oatmeal, or try it cooked whole grain cereal, pancakes, or in salads.

Cinnamon-Pear Balsamic Vinegar

This delightful vinegar is spicy and warm, perfect drizzled over fresh fruit or as a dessert topping. Lacklustre apples for apple crisp? Reclaim that sweet-tart hit of flavour by tossing your diced apples with this beautiful vinegar. It carries forth the unique taste of the D’anjou pear and matches well with many of our sweeter, fruity oils for a delicious marinade or salad dressing! Particularly pleasing with the popular goat cheese and roasted beet salad, over a bed of bitter mixed greens sprinkled with candied nuts.

Try it with our Roasted Almond or Roasted Walnut Oils, or Blood Orange Olive Oil for salad. A truly surprising staff favourite is with the Tuscan Herb Olive Oil. Works well with chicken or pork.
Coconut White Balsamic Vinegar

Our Coconut White Balsamic is wonderfully sweet, pleasingly tart and redolent with the clean, natural flavour of coconut. "Wow, that's REALLY coconut-y!" is most commonly overheard when tasting this one! It's beautiful when tossed with shrimp, or brushed onto delicate white fish. Drizzle into your favourite cocktail or tropical punch to really treat your taste buds!

Divine when paired with Persian Lime or Cilantro & Roasted Onion Olive Oil. Or use as a finishing acidity after stir frying in Dark Toasted Sesame Oil.
Cranberry-Pear White Balsamic Vinegar

This balsamic is clean, crisp and tartly sweet, boasting a lovely deep, rose blush. It has an amazingly fruity, complex bouquet that shines in a multitude of culinary applications. Use to dress garden or fruit salads, in a marinade or glaze for poultry or pork, with gelatin for a delicious fruit aspic, or even in a mixed drink. Definitely a customer favourite at Prairie Oils & Vinegars!

Pairs well with any fruity or herbaceous olive oils. Truly decadent with the gourmet oils. You really have to try this one!
Dark Chocolate Balsamic Vinegar

This Dark Chocolate Balsamic Vinegar is rich, thick, and uses three different chocolates for the depth of its flavour. Drizzle over vanilla gelato, mix with fresh berries, or add zing to your chicken mole sauce. Use with Blood Orange Olive Oil for a decadent bread dipper or unique vinaigrette over spinach salad with toasted almonds and mandarin orange segments. Take this rich, strong flavour to really add depth to your beef roast or marinade using Chipotle or Garlic Olive Oils.

Truly unique! Pairs really well with the Blood Orange Olive Oil. Also, try with Lime, Garlic, or Chipotle Olive Oil.
Dark Espresso Balsamic Vinegar

This vinegar is amazingly complex, with layers of authentic espresso and dark roasted coffee seeping through the aged balsamic taste profile. It makes a fantastic glaze or barbecue sauce base for pork, beef, or chicken. Baste your beef roast in this. Add a shot to an “affogatto float,” which calls for a tall mug of vanilla gelato scoops covered with coffee. Try it in chili!

Pairs well with Blood Orange Olive Oil, Chipotle Olive Oil, or Roasted Almond Oil. Or marinate steak with Lime Olive Oil and a sea salt and crushed peppercorn crust.
Fig Balsamic Vinegar

Made with natural ingredients, our aged Fig Balsamic Vinegar from Modena is thick and ripe, bursting with fig flavour. It hits the tongue with tartness, but follows up with amazing depth of flavour, second only to the richness found in the Traditional Balsamic Condimento. Grapefruit White Balsamic Vinegar

Gravenstein Apple White Balsamic Vinegar

The Gravenstein Apple is a hard to find varietal due to the difficulty farmers have cultivating it, contending with a very finicky tree and a fruit that does not stand travel or storage well. This White Balsamic brings the complexity of the Gravenstein’s larger than life flavour. It positively shines as a unique bread dipper, and creates artisanal dressings, marinades, and sauces. Imagine drizzled over poached pears and brie, melon and bean salad, or with bitter greens and berries.

Honey-Ginger White Balsamic Vinegar

Jalapeno White Balsamic Vinegar

Sweet and tart, but wait, where's the heat? With all of the flavour of ultra fresh, crispy jalapeños, but none of the heat, this unique vinegar adds an element of surprise to your salad dressings, cole slaw mix, or marinades. Add a splash in a ceviche, spice up a salsa or chicken chili. Blend into dressings to top fruit, potato or pasta salad. Use for pickling or to make a spicy homemade mayo.

Lavender Balsamic Vinegar

Maple Balsamic Vinegar

We have searched high and low, and it appears that we have created the first of its kind, a very unique Maple Balsamic, using real 100% pure maple produced at a small family farm in Vermont. This balsamic is outrageously good. Think pancakes, waffles, glazing bacon, salmon, pork chops, ice cream, dressings, marinades, chocolate, cake, fruit, and on, and on, and on.

It pairs insanely well with our Blood Orange Olive Oil for a salad dressing or glaze for salmon. Try it with Roasted Walnut Oil for a decadent bread dipper or dressing.
Neapolitan Herb Balsamic Vinegar

Zesty and versatile, our savoury Neapolitan Herb Balsamic is made from traditional herbs long used in Neapolitan cuisine, including rosemary, marjoram, thyme, garlic, and sage. Try drizzled over roasted vegetables or over fresh, sliced summer heirloom tomatoes. Use to marinade poultry, or to spike a Bloody Mary. Oregano White Balsamic Vinegar

This is a sharp and savoury version of our white balsamic, infused with the exquisite flavor of potent oregano. This classic Mediterranean flavour is heightened by the tartness and sweetness of balsamic, making it a perfect complement to add to many dishes. On top of creating superb vinaigrettes, think Italian soups, sauces, or an interesting spin on fish tacos.

Organic Balsamic Vinegar

This Organic Balsamic Vinegar is produced in the Modena District in central Italy from a supplier who is certified Organic. No artificial or chemical fertilizers are used in their production. It carries forth the wonderful, sweet and sour essence characteristic of balsamic, with a delicately balanced, fruity and full-flavoured finish.

Try this varietal with any of your favourite oils.
Peach White Balsamic Vinegar

Made with white peach compote cooked down to release its intense, sweet flavour, this bright and beautiful white balsamic is crisp and potently peach-y! Amazing as a water flavouring, BBQ sauce flavouring, or to redeem any lackluster fruit salads.

Try it with Tuscan Herb, Garlic, Herbes de Provence, or Basil Olive Oil, to make a light, tart vinaigrette. Pair with Chipotle or Dill Olive Oil for a marinade for pork.

This ruby-toned white balsamic owes its tart, crisp flavor to juicy California Grenada pomegranates and Floral Winter quince. Don't know what a quince is? It is a yellow fruit that looks like a pear, but with a tart flavour, similar in to a sour green apple. Try this blend in dressings, marinades, as a glaze for chicken or pork, in sparkling water, mixed drinks, over fresh fruit or paired with salty aged cheese.

Raspberry Balsamic Vinegar

This thick, rich, perfectly balanced balsamic vinegar shines with the natural flavour of fresh, ripe raspberries. It is probably our top seller when paired with Tuscan Herb Olive Oil for your perfect homemade raspberry vinaigrette for over your everyday garden salad or bitter mixed salad greens with a little feta cheese. But also try it when mixing up a dark chocolate brownie batter or rich cheesecake. Even works well drizzled over pulled pork for something fun!

The Tuscan Herb Olive Oil is the obvious choice, but also try with Chipotle, Lime, or Basil Olive Oil! A local cafe uses this with the Lemon Olive Oil for one of their daily featured salads!
Red Apple Balsamic Vinegar

This balsamic has an enticing aroma and a delicate, sweet apple flavour, fruitier than most balsamic vinegars. It adds a refreshing lift to salads, sauces, chutneys, and vegetables. It makes a wonderful bread dipper or salad dressing, but some would say it is put to best use as a pork marinade before barbecuing or drizzled into a mushroom cream sauce to top those beautiful chops after they're cooked to perfection.

For meat, try it with Wild Mushroom & Sage or Garlic Olive Oil. For bread dipping or salad, try with Basil, Herbes de Provence, or Lime Olive Oils, and is especially delightful with Roasted Walnut Oil.
Serrano Honey Vinegar

Our 2008 Sofi™ Silver award-winning artisan Serrano Honey Vinegar is our only vinegar that is not made from grapes; it's made from a mixture of honey and water, with serrano peppers steeped into it. This makes it sulfite-free, while carrying forth a slightly fermented, sweet and mildly spicy taste. It is a delightful choice anywhere you would usually use rice wine or red wine vinegars. Delicious drizzled over caprese, bruschetta or shrimp dishes. Add to dressings for leafy green, potato, pasta and rice salads. Our staff loves it in a steak marinade--just drizzle a little on after the meat is rubbed with Garlic Olive Oil and Steak & Rib Rub.

Traditional Style Balsamic Vinegar

Let us present our finest balsamic, The King of All Vinegars! Using grape must, it is cooked carefully until it is richly caramelized. Then it is aged using the Solera System for up to 18 years in chestnut, oak, mulberry, and ash barrels. With acidity levels at only 4%, our Traditional Balsamic is exceedingly rich, complex, and dense. Its official name is Traditional Style Balsamic Condimento of Modena PGI, which means Protected Geographical Indication. It is tested and certified to have no sugars, extracts or thickeners. We encourage you to enjoy a sample of this rich Condimento!

Pairs beautifully with any oils in our collection, but is especially fine when in its true element: stunningly drizzled on a plate next to a robust Ultra Premium Extra Virgin Olive Oil, baguette at the ready for dipping.
